Yuba dried tofu or simply ... a soy milk sheepskin coat. It is produced in the tofu production process - a thin layer of protein is deposited on the surface of the cooked milk. Harvested and dried, it is most often in the form of sticks or rolled slices, which, after soaking, can be boiled in vegetable broth or fried. After frying, it becomes very crunchy and perfectly imitates chicken or duck skin.
Yuba dried tofu is used in Chinese, Japanese and Korean cuisines. It works well as an addition to soups, salads, as a filling for gyoza or dim sum dumplings. It takes on the flavor we give it, and it perfectly absorbs the marinade. Tofu skin is also popular in Russian cuisine, where it is called sparża, or asparagus, and it is found in a spicy salad with Chinese cabbage and carrots.
Yuba contains as much as 20g of protein (as much as chicken) and is light - only 0.5% fat, which makes it a really great meat substitute for vegans and vegetarians.
